Lemon and Shrimp Risotto  

Ingredients: Arborio rice, fresh shrimp, lemon, vegetable broth, onion, white wine, butter, extra virgin olive oil, salt, pepper.  

Preparation: Sauté chopped onion in oil, add rice and toast it. Deglaze with white wine, then gradually add broth. Halfway through cooking, add shrimp and grated lemon zest. Toss with butter before serving.  

  

Spelt Salad with Vegetables, Feta and Watermelon  

Ingredients: Spelt, zucchini, bell peppers, cherry tomatoes, feta cheese, basil, chopped watermelon, extra virgin olive oil, salt, pepper.  

Preparation: Cook the farro and let it cool. Cut vegetables into cubes and mix with farro, add crumbled feta, season with oil, salt and pepper, and garnish with fresh basil. 

Caprese with Buffalo Mozzarella and Peaches  

Ingredients: Buffalo mozzarella, fresh peaches, arugula, extra virgin olive oil, salt, pepper, balsamic vinegar.  

Preparation: Slice the mozzarella and peaches. Arrange on a plate with the arugula. Season with oil, salt, pepper and a drizzle of balsamic vinegar.
